Objectives and tasks
• Be responsible for the tasks ordered by the Chef de Partie or by the Chef himself.
• Be able to prepare the service:
– Assists with set-up
– Cleans, washes, peels, cuts and cooks’ vegetables/fruits
– Prepares garnishes, cold sauces, soups, appetizers, desserts, salads, etc.
– Cuts and cooks’ food
– Assists the chef or chef de partie in the preparation and delivery of dishes
– Tidy and clean the kitchen and work areas
– Maintains order and cleanliness in the kitchen
– Observes safety standards while on the job
– Orders, receives and controls merchandise under the direction of the chef or chef de partie
• Follows recipes
• Follow the sanitary process
